Pure race
of authentic lineage

At a very young age, cattle is registered to be able to keep a record by means of a 10-digit identification, this allows a strict and legitimate traceability of the location and sale of the meat before arriving to your table. These digits indicate the breed of the cattle, their place of birth, place of breeding, sale and authenticity. Kobe cattle are a type of Wagyu breed, but in order to obtain this designation of origin, they must have been born, grown and slaughtered within the Hyogo prefecture in Kobe, as well as meet a number of very specific requirements, including having pure lineage, having received the necessary care and nutrition and having a specific degree of marbling. A variation of these standards, even a slight shift, would result in a very good quality cow but only Wagyu breed, it could not be certified as Kobe.

Each authentic Kobe meat cut can be tracked at their website. All establishments authorized to sell this exclusive delicacy worldwide must have the following: the bust of Kobe and a golden medal that shows the image of a cow and represents the legitimacy of the meat sold in said establishment.
